A Futures Wine Tasting is perfect for those without patience! While drinking wine before its time is a downright shame, how does one know when it is time? There are a couple of ways to ensure optimal results when uncorking a good red. One method is to buy multiple bottles of the same vintage, then open one every six months to a year and do a wine tasting. Your palate will tell you when the rest are ready, if there are any left.

Be sure to mark your bottles with the date purchased. Also write comments as you taste them as to how they change. This will help you to determine when they are at their peak condition. There should be a vintage date on the label, but that doesn’t directly tell you the details of the wine aging. Oak aged wines can spend anywhere from 12 months up to 36 months in our cellars. A younger red, like Malbec, or a white like Chardonnay or Riesling, may only be in barrels for a year (or less). Some reds are required to be in barrels for at least three years, like Brunello. We hope to fill you in on all of this over wine at the Futures Wine Tasting in April.

The Futures Wine Tasting will take place where our barrels age, in the old Ahnapee Brewery fermentation vaults. These three tunnels were constructed in the 1860s to be natural refrigerators with help from Ahnapee River ice. The cool temperature was ideal for fermenting lager beers. Local limestone was quarried and mortared into 36″ thick walls that arch to a keystone. This was no small feat, and if taken on today would cost upwards of a million dollars. These tunnels hold consistent cool temperatures, making them ideal for wine aging.
