UPDATE (Early 2026): The results are in! Based on your feedback from V2.0, we have officially released Artificial Intelligence 3.0. We heard your requests for a drier, Sauvignon Blanc-style profile, and the machine has spoken.

While Artificial Intelligence use has taken off, we have continued to use our trademarked Artificial Intelligence wine to build the perfect future wine blends. The first batch of von Stiehl Artificial Intelligence wine was introduced as red and white blends in the summer of 2023.

We collected the reviews up to March 20, 2024. Results were compiled and submitted to two separate Artificial Intelligences. (Is Intelligences a word? Perhaps Intelligenci?) We submitted to both ChatGPT and Gemini. The results were given to our winemaking team to utilize for the production of our second batch of Artificial Intelligence wine. Version 2.0 may have been the only professionally produced, crowd-sourced wines!

The 2.0 versions of our Artificial Intelligence wines were released in June, 2024. Reviews for the white wine were collected through November 2025. Once again, our winemakers processed these results and went to work creating a third batch. While the 2.0 red is still in circulation, the white has sold out and has been replaced with 3.0. The feedback shows a clear trend, with the majority of specific taste recommendations directing the wine toward a drier profile.

Recommended Flavor Adjustments for the Next Batch

Based on the cumulative customer data, the recommended taste profile for the next version of “Artificial Intelligence White” is a drier, lower-carbonation white wine.

  1. Reduce Sweetness/Increase Dryness: The most consistent request is for the wine to be less sweet and drier. This suggests a need to drop the residual sugar level. The desire for a “more Sauvignon Blanc” profile further reinforces this drier direction.
  2. Mitigate Carbonation: Customers described the mouthfeel as “a little fizzy”, “little sparkly”, and “fuzzy”. The recommendation is to eliminate this light carbonation to achieve a still wine mouthfeel.
  3. Refine Fruit Profile: Reduce the pronounced grapefruit flavor. The goal should be a blend of complex flavors 41that is unique and crisp, centered on a fresh, fruit-forward taste with a strong citrus base.
  4. Target Finish: The new finish should be clean and smooth, with a better aftertaste that is explicitly dry.

Summary Action: Create a Drier, Crisper, and Still white wine that maintains the current blend’s complex, fruit/citrus notes but eliminates the light fizz and moves away from a dominant grapefruit flavor.
