Cold Reds, Warm Nights: The Ultimate Chilled Red Wine Guide

5 von Stiehl Wines that Fit the Chilled Red Wine Trend

It turns out that von Stiehl already offers some great reds for the chilled red wine trend. While we don’t claim to be too cool for school, there are times that being a traditional winery gets a bit, well, old. Our passion couldn’t be stronger for a room temperature Cabernet Sauvignon in November, but the weight of nice red wine gets a bit much when the temps and humidity grow past the comfort zone.

While summer is here (for a hot minute), we’d like to encourage you to bring out those plastic cups while sitting on the patio, your best friend’s boat, or the kitchen (because it’s just too hot out).

The chilled red wine trend is growing for a reason. A cooler temp of the right bottle brings out fruit flavors, tames the heat of the alcohol, and turns a well-made red into a refreshing sipper.

Now that you’ve cleared a spot in the fridge for the right bottles, which red should you chill first? While many of our reds will hit the summer spot with a bit of a chill, below are five of our reds that we chill even when serving in our tasting room. So no question about it, it’s okay to refrigerate.

1. Naughty Girl Red

  • The Vibe: Crisp, bright, and unapologetically fun.

  • The Actual Food Pairing: The “I’m Not Cooking Tonight” Charcuterie Board.

  • Why it works: When you give this bottle a good chill, the fresh berry flavors wake up instantly. It is practically begging for salty prosciutto, rich cheeses, and those fancy crackers you buy only when guests are coming over. It cuts through the fat of the meats perfectly, making it the ultimate casual grazing partner.

2. Satin Red

  • The Vibe: Smooth, velvety, and effortlessly elegant.

  • The Actual Food Pairing: Wood-Fired (or Delivery) Pizza.

  • Why it works: True to its name, this wine has a gorgeous, smooth texture that feels incredible with a slight chill. Lowering the temperature highlights its soft, luscious fruit while keeping the finish clean. Pair it with a classic pepperoni or margherita pizza—the acidity in the tomatoes and the richness of the cheese love a smooth, cool red companion.

3. Sassy Sangria

  • The Vibe: Fruit-forward, vibrant, and ready to party.

  • The Actual Food Pairing: Spicy Street Tacos or Backyard BBQ.

  • Why it works: Sangria is already the undisputed champion of the refrigerator in summer, but serving our Sassy Sangria nice and cold alongside a plate of tacos or pulled pork is a game-changer. The vibrant, fruit sweetness cools the heat from spicy salsas and balances out smoky, tangy BBQ sauces beautifully.

4. Crimson Royale

  • The Vibe: Rich, sweet concord grapes with a vibrant, classic finish.

  • The Actual Food Pairing: Gourmet Mac & Cheese or Sharp Wisconsin Cheddar.

  • Why it works: This award-winning sweet classic is a total crowd-pleaser when cold. Chilling it emphasizes its vibrant fruit core (like eating a fresh grape), making it an incredible partner for comfort foods. Pour a glass alongside a rich, creamy homemade macaroni and cheese, or a casual platter of sharp cheddar and havarti. The sweet-and-savory contrast is addictive.

5. Sparkling Crimson Royale

  • The Vibe: Effervescent, celebratory, and wildly refreshing.

  • The Actual Food Pairing: Classic Backyard Burgers or Fried Chicken.

  • Why it works: Bubbles change everything. The sparkling texture combined with the fresh grape taste and a crisp chill makes this the ultimate underdog pairing for heavy, savory comfort foods. The sparkling nature cuts right through the richness of a juicy cheeseburger or crispy fried chicken, cleaning your palate between every single bite. If the night gets late and there’s a fire, try with s’mores and substitute peanut butter cups for the milk chocolate.

One last reminder – the 20-minute rule.

Don’t freeze these bottles into blocks of ice! To hit the sweet spot, give your bottles about 20 to 30 minutes in the fridge (or a quick 10-minute plunge in an ice bucket) before pouring. You want them refreshing and cool to the touch, letting the gorgeous aromas still jump out of the glass.

Whether you’re hanging out on the deck, hosting a casual backyard grill-out, or just kicking back after a long week, it’s time to make some room in the fridge to for the chilled red wine trend.
