Turn your holiday meal leftovers into an easy dish that you can enjoy any time and pairs great with von Stiehl Cranberry Wine. Each bottle of Cranberry wine is jam-packed with cranberries. In fact, if you like dry red wines, you need to give this one a try, you might be surprised at how much you enjoy it. The cranberries in this wine come to us from Wisconsin Rapids and are hot-pressed to extract the most color and flavor. The cranberry juice is then fermented in stainless steel to create a more intense, tart, but balanced wine. This is why von Stiehl Cranberry wine is a special treat with your holiday meals and leftovers.
- 3 cups shredded chicken or turkey
- 2 stalks celery, chopped
- 1 cup firm red grapes, cut in half
- 1/2 cup sliced almonds
For the Dressing:
- 1/2 cup mayo
- 1/4 cup plain greek yogurt
- 1 tbsp lemon juice
- 1 tsp garlic salt
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Sandwich
- 6 large croissants
- green leaf lettuce
- Combine the chicken (or turkey), celery, grapes and almonds in a large bowl.
- In a separate bowl whisk together the ingredients for the dressing until smooth. Pour the dressing into the bowl with the chicken and stir until it is all coated.
- To serve the sandwich, cut the croissants in half and place a leaf of lettuce on the bottom half. Top with the chicken salad mixture and place the top half of the croissant on the top.
- Enjoy with a glass of von Stiehl Cranberry wine.

Warm your home with the delightful smell of Peach Cobbler. Then once you have created this delicious dessert, enjoy a glass of Late Harvest Reisling. Our Late Harvest Riesling grapes come from Yakima Valley in the state of Washington. The desert-like climate provides a long summer full of hot days and cool nights coupled with irrigation from the Columbia River. The grapes are left on the vine well into the fall to intensify in taste and sweetness. This is why Late Harvest Reisling pairs so great with a dish like Peach Cobbler.
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 2 cups sugar (divided)
- 1 tablespoon baking powder
- Pinch of salt
- 1 cup milk
- 4 cups fresh beach slices
- 1 tablespoon lemon juice
- Ground cinnamon or nutmeg (optional)
- Melt butter in a 13′ x 9′ inch baking dish.
- Combing the flour, 1 cup of sugar, baking powder and salt. Then add milk and stir until dry ingredients are moist. Pour the batter over butter but DO NOT STIR.
- Bring the remaining 1 cup of sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly. Then pour over the batter again, DO NOT STIR. Top with a sprinkle of cinnamon or nutmeg is desired.
- Bake at 370 for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.

Being located on Lake Michigan we have a love for fish and seafood. Many of our wines pair perfectly with both. Our September featured wine is Sparkling Viognier & Chenin Blanc and it compliments shellfish dishes wonderfully. Cook up this delicious recipe and pair it with our dry white, Sparkling Viognier & Chenin Blanc.
- 2 tablespoons olive oil
- 1 tablespoon fresh lime or lemon juice
- 6 garlic cloves (grated or minced)
- 1/4 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 pound shelled large shrimp (leave the tails attached) and deveined
- Whisk together olive oil, juice, garlic, cumin, red pepper flakes, salt, and black pepper. Add in shrimp and toss to coat. Set aside for 20 minutes to marinate. *
- After marinating, place marinated shrimp into a saucepan. Cook over medium heat until done (about three minutes), turning them over halfway through.
- Plate your shrimp with your favorite type of noodle or a side of rice. Don’t forget your glass of von Stiehl Sparkling Viognier & Chenin Blanc.
*Shrimp may be marinated for up to a day. If you are marinating your shrimp for more than 20 minutes, omit lime/lemon juice, then add juice just before cooking.

This event is exclusively made with our Family Plan Club members in mind. This weekend is the perfect time to pick up your selection, try new wines, and enjoy special offerings only club members are given.
During the Pick Up Weekend, you will be able to sample wines in the cellar that will be paired with various treats, munchies and cheeses. These pairings will be different than what will be in the selection, giving you even more ideas on what to pair with our wine! Glasses of the featured wines will be available for 50% off!
Pairings will feature our wine with some of our favorite munchies and sweets!
Bring a friend to show them how much you love von Stiehl and our wine! If you refer your friend to become a family plan club member, you will be given $10 off a purchase at the winery!

Will my guests have to pay?
Maybe! A Family Plan membership includes free admission for two individuals. If you are able to attend but your partner isn’t able to, you are more than welcome to invite a friend to take their place. Any additional individuals will have to pay $10. However, if they sign up for the Family Plan at the party they will be refunded with a $10 wine certificate.
Can I attend even if I am not a guest or a Family Plan member?
We are allowing non-Club members to indulge in the special offerings for $10 during the Pick Up Weekend. If you do come and pay $10 and then decide to join the club, you will be refunded with a $10 wine certificate!

Wine Pairing Tour Includes Four Courses – Winter 2016-2017

That feeling is growing; you know, the one where you need to get out of the house! It’s usually coupled with a desire for something new, something involving food, and something with good friends to lift your spirits. Here’s the antidote: grab three friends and sign up for our four-course pairing tour.
What we propose to offset the winter doldrums (instead of a tour and tasting) is a tasting tour. Enjoy a wine pairing tour this winter with at least three others.
You’ll get to take in the production and wine-aging tunnels with pairings of wine and food along the way. Sample a wide variety of wines. Taste in the 150 year-old barrel aging cellars. See the two-story fermenters up close. This tasting experience includes a wine pairing with locally-produced meat, cheese, and chocolate.
Begin in the tasting room at the bar. This tasting is elevated above your typical complimentary experience. You’ll enjoy a sampling of your choice of six fine wines from our complimentary and Select Vintages wine tasting list. The value of this pairing is $5 per person.
Tour our production facility. See the difference our modern equipment makes when used to produce great wines. Fermentation vessels, the first isobaric bottling line of its kind in North America, ozone and nitrogen generators, a computer-controlled glycol chiller system, and the list goes on.
Go underground and explore the tunnels. Tour our Rathskeller, originally built for the lagering of beer by Ahnapee Brewery in the 1800s. Learn the history of von Stiehl, and the art of barrel aging red wines. From hand-split French Gamba Oak to white Wisconsin oak, the barrels make a huge difference in the smoothness of von Stiehl reds. Enjoy a special white wine blend paired with local cheese. Sample red wine paired with meats from local smoke shops. Value $14 per person.
Return to our tasting room to enjoy a chocolate pairing flight. Take a seat at our cork tables by the fireplace, then experience the pairing of three wines with three specialty chocolates. Just don’t sit too close — you’ll melt the chocolate! Value $7.50 per person.
Package Value $106 for four, but we’re offering this experience for only $30 for four people. Are there more friends that you’d like to invite? Bring six guests for $44 or eight guests for $55.

Please call with at least 7 days advance notice. Tours are typically at 10:30 AM and 1 PM on Fridays, Saturdays, and Sundays. We will be able to accommodate up to twelve guests per time slot. It may be possible to schedule other times. Rescheduling due to weather is permitted. Multiple flights of stairs and outdoor walking will be involved. We will do our best to modify the experience for those who are handicapped. Please note that the experience is for 4, 6, or 8. We cannot accommodate parties of two.
