Distillery
While awaiting the arrival of our new copper still, we have been working with two Wisconsin rectifiers to distill our wines into brandy. You see, a winery can age, but cannot sell spirits. Some of these barrels have been secretly stored in the old spaces above our bottling line since 2016. We’re told these 120 year-old rooms are more haunted than the original winery. Seems right.
We received our state rectifier’s permit in the spring of 2023. That means it’s time to release the liquid spirits; the others can stay put.
We now offer five spirits in our Cider and Spirits Bar.
Crafted meticulously from Wisconsin-grown ingredients comes our premium bourbon whiskey. Expertly blended from four and six-year-old bourbon whiskeys aged in American white oak barrels. Famous Door County Montmorency cherries are fermented on-site and distilled, then aged in used bourbon barrels to give this brandy its signature color and taste. Soft cherry flavors with supple vanilla and spice round out this brandy. It’s perfect for Old Fashioneds, paired with vanilla bean ice cream, or in a cherry version of a Brandy Alexander. Door and Kewaunee County apples are late harvested after they have developed more sugars, then hammer milled, fermented, distilled, and aged in American white oak and used bourbon barrels. Apple and butterscotch flavors provide a savory base for this spirit to enhance Hot Toddies, mulled ciders, Old Fashioneds, and rich cheeses. Aged 3 years, 40% ABV (80 Proof), 375ML, $36/bottle
Grape pomace from our single varietal wines is distilled, then aged for four years in used bourbon barrels. The spent seeds and skins provide an excellent base for fruit and floral notes in the grappa, while the oak aging provides hints of hazelnuts and dark chocolate. Our grappa goes magnificently with espresso or fresh roasted coffee, bitter dark chocolate, or dried fruits. Aged 4 years, 40% ABV (80 Proof), 375ML, $36/bottle
